Next time you cook with pumpkin, butternut squash, onion squash etc, don't throw away the seeds. They're full of nutrients and protein and you can make a tasty and healthy snack if you don't overdo the salt.

 

Heat your oven to 190 degrees. Rinse the scooped out squash seeds in a colander to get off any fleshy bits of pumpkin/squash.

 

Line a baking sheet with parchment paper and spread the seeds out on it in a shallow layer. Drizzle over olive oil and some sea salt, bake for 15-30 minutes, maybe while you're roasting the sqash. When the seeds are golden, they're ready.
