The amount of orange/lemon/tangerine peel they get thrown away every day is incredible.

Before you start breaking into your orange/lemon/tangerine – et cetera, with a potato peeler skin off the outside layer of peel – leaving the pith behind. Take all those slivers of peel and put them into a Kilner jar with sugar in it. Shake it all up so that they really covered in sugar. Seal the jar.

You will find that the staff will keep for ages and every now and then put into a saucepan with a little bit of water and heat it up and let it simmer in the sugar syrup for a while.  Dry it off on a rack and put it in another kilner jar.  Store it well out of reach - it is very more-ish!!
